
This is a tasty ratatouille recipe that goes great with crumbled feta cheese. Get the ingredients listed below and we can start preparing this sumptuous delicacy.
Ingredients:
1. One medium sized onion, cut into thin strips.
2. A teaspoon of salt.
3. One small aubergine (also known as eggplant or brinjal), sliced into half inch pieces.
4. Freshly crushed black pepper.
5. Four medium sized paste tomatoes (also called plum tomatoes).
6. One bay leaf\ (small size).
7. One red capsicum (bell pepper), cut into thin strips.
8. A quarter cup of basil leaf, shredded.
9. Four fresh garlic cloves, chopped.
10. A small sized zucchini, cut into thin pieces.
11. Six teaspoons of extra virgin olive oil/
Preparation:
1. First heat up the olive oil in a saucepan over a low flame along with the chopped garlic, bay leaf and onion slices. Stir every now and then until the onions become tender.
2. Add the aubergine pieces into the saucepan and cook the mixture for about 9 minutes. Once again, do keep in ming to stir occasionally.
3. Now, add in the plum tomatoes, salt, red capsicum and the zucchini pieces and stir the mixture well. Let the mixture cook for another 7 minutes or until the vegetables in the mixture are soft and cooked well.
4. Finally add in the shredded basil and the pepper and stir it into the mixture.
Your ratatouille is now prepared. This ratatouille recipe goes well with thai jasmine rice, or basmati rice along with crumbled feta cheese.
