
This delicious ratatouille dish is made with spiral pasta and makes a great meal for a family dinner. To make this ratatouille recipe you will need the following ingredients,
Ingredients:
Two cups of aubergines (eggplant), peeled and cut into cubes.
A can of tomatoes that are diced well.
Two cups of Zucchini (sliced)
A cup of onions (sliced)
A cup of Mozarella cheese (shredded)
One and a half cups of spiral pasta
Half a teaspoon of salt
Three teaspoons of olive oil
Six teaspoons of tomato paste

Preparation:

1. You first need to take the diced eggplant and zucchini and place it in a colander (A colander is a sieve in the shape of a large bowl that is made from either aluminium or plastic). Pepper the zucchini and eggplant with salt and toss it well in the colander. Leave it for about half an hour and then rinse and drain.

While the pasta is cooking, take a large skillet (which is basically a large non-stick frying pan) and sautee the aubergines (eggplant), zucchini and onions in olive oil until they become soft.
