Ratatouille is a stewed vegetable dish that originates from the french rovince of Nica. The dish is generally made from a variety of different vegetable such as tomatoes, zucchini, onion, garlic, aubergine (eggplant), bell pepper, basil leaves and a mixture of other herbs.

There are two ways of making a ratatouille dish. One involves is quite simple and just involves sauteeing all the vegetables together. In the second method some of the vegetables are sauteed together while the other ingredients are made into a sauce. The sauce is then layered over the vegetables and the the ratatouille is left to bake in the oven. Ratatouille may also be used as a filling in crepes and omelettes.

This is a delicious ratatouille dish that has plenty of vegetables. You will need the following ingredients to preparte it,

 

Ingredients:

1. Six teaspoons of olive oil.

2. Three cloves of fresh garlic (finely chopped).

3. Two teaspoons of dry parsely.

4. One Aubergine (eggplant) cut into cubes.

5. One green bell pepper (capsicum) sliced into strips.

6. One cup of parmesan cheese (finely grated).

7. Three medium sized tomatoes.

8. Two cups of frsh mushrooms.

9. Two medium sized onions cut into circular rings.

10. Two Zucchini cut into slices.

11. Salt to taste.

 

Preparation:

1. You first need to preheat the oven to about 350 degrees fahrenheit and then smear the bottom and sides of a casserole dish with olive oil.

2. Now take three teaspoons of olive oil and heat it in a frying pan. When the oil gets hot, add in the chopped garlic and sautee it until it turns slightly brown.

3.Now add the aubergines and parseley in and sautee the mixture for about 10 minutes or until the aubergines turn soft. Sprinkle a pinch of salt over the mixture and mix it in.

4. Next take the mixture and spread it evenly over the olive oil coated casserole dish. Sprinkle a few tablespoons of grated parmesan cheese over the mixture. You can now layer the sliced zucchini evenly over the mixture and once again sprinkle parmesan cheese over the top along with a pinch of salt.

5. Continue adding individual layers of bell pepper, mushrooms,  tomatoes and onions one on top of the other and make sure to sprinkle parmesa cheese and a pinch of salt over each layer.

6. Finally place the casserole dish into the preheated oven and bake it for about 45 minutes.  Your ratatouille dish is now ready to eat. Preparation time for this ratatouille recipe should be about 60 minutes.
